LIME O LIME


LIME-GINGER COCKTAIL


Ingredients.

Lime juice                      -  5 Cups                                             

Ginger juice                   -  1 Cup

Water                             -  5 Cups

Citric Acid                      -  1 Teaspoon

Sugar                             -  12 Cups

Lime essence                -  1 Tea spoon  (Optional)

K.M.S (Preservative)     -  ¼ Teaspoon   (Optional)


METHOD

               
Squeeze the lemons to extract the juice.
Peel the ginger, grate and squeeze out the juice from the ginger.
Mix the lemon and ginger juice together and keep aside.
Boil sugar and water for 10 minutes, add a few drops of lime
juice to remove impurities.
Strain the sugar syrup through a strainer and allow it to cool completely.
Mix sugar syrup with already mixed lemon and ginger juice.
Add the lime essence and K.M.S (if needed) and bottle.
Serve chilled in the proportion of 1part concentrate with 4 parts cold water
.

LEMON BARLEY COCKTAIL


Ingredients.


Lemon juice                 -   5 Cups

Sugar                           -  10 Cups

Water                           -   5 cups

Barley powder              -   4 Teaspoon

K.M.S (Preservative)    -  ¼ Teaspoon (Optional)


METHOD.



Gradually make a paste of barley powder with little water.

Add the water to the paste and mix well.

Heat the barley solution till it becomes clear.

Add sugar and boil for another 5 minutes.

To remove the impurities add a teaspoon of lemon juice to the boiling sugar syrup.

Strain the syrup with a strainer and allow it to cool completely.

Mix the cooled sugar syrup with the barley lemon juice and stir well.

Add K.M.S (Optional) and bottle.

For serving mix one part concentrate with 4 parts cold water.

TOMATO SQUASH

Ingredients

Tomato Juice  -     5 glasses.

Sugar              -     5 glasses.
 
Water              -     2 &1/2 glasses.

Salt                 -      1/4 teaspoon.

Citric acid      -       1 teaspoon

Tomato color  -      a little  (optional)

Sodium Benzoate (preservative)  -   two pinch


Method.

Select fully ripe juicy red tomatoes.

Wash the fruits thoroughly and cut into pieces

Boil for 10 minutes stirring occasionally

Strain the juice to remove seeds and skin.

Measure the juice and keep aside.

Prepare sugar syrup with sugar salt and water.

When it starts boiling add citric acid and boil for another 5 minutes.

Strain the hot sugar syrup.

Mix the sugar syrup and the juice together

When cool add color and preservative if needed and bottle the concentrate.

When  needed  mix 1/4 times of tomato concentrate with 3/4 times of ice cold water.

Stir well and serve chilled.
